What does "Korban", sacrifice mean? Does is mean giving something up? Or does it mean something else?
Notice in this very long passage how the offerings move from cattle all the way to grains. Why would this be? Does it speak to differing levels of holiness or perhaps to the ability of a person to afford a sacrifice?

There are offerings specifically for the Priests. Here is one of many; this is a daily offering. There are other offerings for holy days, Shabbat, etc. (We'll return to those later in the course.)
This passage begins the ritual for the Investment of Aaron and his sons as Priests.
This episode occurred at the conclusion of the Investment/Elevation ceremony. Why did it happen? Are Nadav and Avihu heroes or villians?

Through those near to Me I show Myself holy,
And gain glory before all the people.”
And Aaron was silent. (4) Moses called Mishael and Elzaphan, sons of Uzziel the uncle of Aaron, and said to them, “Come forward and carry your kinsmen away from the front of the sanctuary to a place outside the camp.” (5) They came forward and carried them out of the camp by their tunics, as Moses had ordered. (6) And Moses said to Aaron and to his sons Eleazar and Ithamar, “Do not bare your heads and do not rend your clothes, lest you die and anger strike the whole community. But your kin, all the house of Israel, shall bewail the burning that יהוה has wrought. (7) And so do not go outside the entrance of the Tent of Meeting, lest you die, for יהוה’s anointing oil is upon you.” And they did as Moses had bidden. (8) And יהוה spoke to Aaron, saying: (9) Drink no wine or other intoxicant, you or your sons, when you enter the Tent of Meeting, that you may not die. This is a law for all time throughout the ages, (10) for you must distinguish between the sacred and the profane, and between the impure and the pure; (11) and you must teach the Israelites all the laws which יהוה has imparted to them through Moses.
Now we move to a discussion of Kashrut, Jewish dietary laws. There are three aspects to Kashrut:
1. Permitted and forbidden animals (found here);
2. A prohibition against boiling a kid (baby goat) in its mother's milk (found 3 times in the Torah);
3. A prohibition against eating blood (found in many places in the Torah, but especially in the next passage).
A statement as to why Jews are to follow the Torah and believe in YHVH.
The Holiness Code, as this passage is called, is one of the most important passages in the entire Torah. Note how it restates the 10 Commandments, with its focus, not on Jewish law but on moral behavior.

(1) יהוה spoke to Moses, saying: (2) Speak to the whole Israelite community and say to them: You shall be holy, for I, your God יהוה, am holy. (3) You shall each revere your mother and your father, and keep My sabbaths: I יהוה am your God. (4) Do not turn to idols or make molten gods for yourselves: I יהוה am your God. (5) When you sacrifice an offering of well-being to יהוה, sacrifice it so that it may be accepted on your behalf. (6) It shall be eaten on the day you sacrifice it, or on the day following; but what is left by the third day must be consumed in fire. (7) If it should be eaten on the third day, it is an offensive thing, it will not be acceptable. (8) And one who eats of it shall bear the guilt for having profaned what is sacred to יהוה; that person shall be cut off from kin. (9) When you reap the harvest of your land, you shall not reap all the way to the edges of your field, or gather the gleanings of your harvest. (10) You shall not pick your vineyard bare, or gather the fallen fruit of your vineyard; you shall leave them for the poor and the stranger: I יהוה am your God. (11) You shall not steal; you shall not deal deceitfully or falsely with one another. (12) You shall not swear falsely by My name, profaning the name of your God: I am יהוה. (13) You shall not defraud your fellow [Israelite]. You shall not commit robbery. The wages of a laborer shall not remain with you until morning. (14) You shall not insult the deaf, or place a stumbling block before the blind. You shall fear your God: I am יהוה. (15) You shall not render an unfair decision: do not favor the poor or show deference to the rich; judge your kin fairly. (16) Do not deal basely with members of your people. Do not profit by the blood of your fellow [Israelite]: I am יהוה. (17) You shall not hate your kinsfolk in your heart. Reprove your kin but incur no guilt on their account. (18) You shall not take vengeance or bear a grudge against members of your people. Love your fellow [Israelite] as yourself: I am יהוה. (19) You shall observe My laws. You shall not let your cattle mate with a different kind; you shall not sow your field with two kinds of seed; you shall not put on cloth from a mixture of two kinds of material. (20) If a man has carnal relations with a woman who is a slave and has been designated for another man, but has not been redeemed or given her freedom, there shall be an indemnity; they shall not, however, be put to death, since she has not been freed. (21) But he must bring to the entrance of the Tent of Meeting, as his guilt offering to יהוה, a ram of guilt offering. (22) With the ram of guilt offering the priest shall make expiation for him before יהוה for the sin that he committed; and the sin that he committed will be forgiven him. (23) When you enter the land and plant any tree for food, you shall regard its fruit as forbidden. Three years it shall be forbidden for you, not to be eaten. (24) In the fourth year all its fruit shall be set aside for jubilation before יהוה; (25) and only in the fifth year may you use its fruit—that its yield to you may be increased: I יהוה am your God. (26) You shall not eat anything with its blood. You shall not practice divination or soothsaying. (27) You [men] shall not round off the side-growth on your head, or destroy the side-growth of your beard.
Here is the locus for the Sabbatical Year, when the land is to lie fallow. It also describes the Jubilee Year, which occurs every 50 years, after 7 cycles of Sabbatical years, when the land lies fallow an extra year - and mandates the remission of all Israelite slaves.
This section concludes the Book of Leviticus and tells us of the blessings due to us if we follow God's ways - and the curses if we don't. There are three levels of curses. This is the first level; there are worse punishments to come, including starvation, warfare and even cannibalism.
(יד) וְאִם־לֹ֥א תִשְׁמְע֖וּ לִ֑י וְלֹ֣א תַעֲשׂ֔וּ אֵ֥ת כׇּל־הַמִּצְוֺ֖ת הָאֵֽלֶּה׃ (טו) וְאִם־בְּחֻקֹּתַ֣י תִּמְאָ֔סוּ וְאִ֥ם אֶת־מִשְׁפָּטַ֖י תִּגְעַ֣ל נַפְשְׁכֶ֑ם לְבִלְתִּ֤י עֲשׂוֹת֙ אֶת־כׇּל־מִצְוֺתַ֔י לְהַפְרְכֶ֖ם אֶת־בְּרִיתִֽי׃ (טז) אַף־אֲנִ֞י אֶֽעֱשֶׂה־זֹּ֣את לָכֶ֗ם וְהִפְקַדְתִּ֨י עֲלֵיכֶ֤ם בֶּֽהָלָה֙ אֶת־הַשַּׁחֶ֣פֶת וְאֶת־הַקַּדַּ֔חַת מְכַלּ֥וֹת עֵינַ֖יִם וּמְדִיבֹ֣ת נָ֑פֶשׁ וּזְרַעְתֶּ֤ם לָרִיק֙ זַרְעֲכֶ֔ם וַאֲכָלֻ֖הוּ אֹיְבֵיכֶֽם׃ (יז) וְנָתַתִּ֤י פָנַי֙ בָּכֶ֔ם וְנִגַּפְתֶּ֖ם לִפְנֵ֣י אֹיְבֵיכֶ֑ם וְרָד֤וּ בָכֶם֙ שֹֽׂנְאֵיכֶ֔ם וְנַסְתֶּ֖ם וְאֵין־רֹדֵ֥ף אֶתְכֶֽם׃
