כל שנה אני משתדל להכין נושא לליל הסדר שנובע מגירוי מהסדר הקודם. בסדר הקודם סמתי לך שאילו ששתו רק מיץ ענבים היו כצת חוסרי סבלנות להתנהגות של אלו השותים יין. זה הוביל אותי לחשוב למה התנאים שהנהיגו את הסדר הכניסו שתיית יין דוקה כמרכיב חשוב. כדי לענות על השאלה סקרתי כל המקורות התנאים שעוסקים ביין. ומביא אותם כן לפי תת סעיפים.
Abstract
Each year I try to prepare material for the seder that was inspired by the previous years seder. At the seder that preceded this one, some of those who were drinking grape juice instead of wine were a bit impatient with those whose were clearly drinking wine. This got me to wonder about why the tanaim, during whose time the seder was established, included wine as a vital ingredient. In an attempt to answer this question I systematically reviewed all known sources from the period of the tanaim that related to wine. All of these sources are brought here and put into rough categorizes. Also included material about the role of wine in the Roman and Greek symposium which some believe had an influence on the seder.

§ Having mentioned the prohibition against plastering, which is a sign of mourning over the destruction of the Temple, the Gemara discusses related matters. The Sages taught in a baraita (Tosefta, Sota 15:11): When the Temple was destroyed a second time, there was an increase in the number of ascetics among the Jews, whose practice was to not eat meat and to not drink wine. Rabbi Yehoshua joined them to discuss their practice. He said to them: My children, for what reason do you not eat meat and do you not drink wine? They said to him: Shall we eat meat, from which offerings are sacrificed upon the altar, and now the altar has ceased to exist? Shall we drink wine, which is poured as a libation upon the altar, and now the altar has ceased to exist?
מעשה ברבי עקיבא שעשה משתה לבנו ועל כל כוס וכוס שהביא אמר חמרא וחיי לפום רבנן חיי וחמרא לפום רבנן ולפום תלמידיהון:
(ג) מצוה על האדם לשמח בניו ובני ביתו ברגל במה משמחן ביין [כדכתיב (תהילים קד) ויין ישמח לבב אנוש וגו'] רבי יהודה אומר [נשים] בראוי להם וקטנים בראוי להם.
(3) It is a commandment upon a person to make happy his children and the members of his household on the pilgrimage festivals. Through what [should he make them happy]? He makes them happy with wine! [As it is written (Psalm 104): "And wine will make happy the heart of man etc."]. Rabbi Yehudah said: [Women] as befits them and minors as befits them.

II. Wine as central to the seder
(א) עַרְבֵי פְסָחִים סָמוּךְ לַמִּנְחָה, לֹא יֹאכַל אָדָם עַד שֶׁתֶּחְשָׁךְ. וַאֲפִלּוּ עָנִי שֶׁבְּיִשְׂרָאֵל לֹא יֹאכַל עַד שֶׁיָּסֵב. וְלֹא יִפְחֲתוּ לוֹ מֵאַרְבַּע כּוֹסוֹת שֶׁל יַיִן, וַאֲפִלּוּ מִן הַתַּמְחוּי:
(1) A man may not eat until it gets dark on the eve of Pesach [from] close to [the time of] the afternoon offering. Even the poorest person in Israel may not eat [on the eve of Pesach] until he reclines [at the night's Seder]. And [the communal officers] must give him no fewer than four cups of wine, and [they must do so] even [if he receives relief] from the charity plate.
(א) ערבי פסחים סמוך למנחה לא יאכל אדם עד שתחשך אפילו עני שבישראל לא יאכל עד שיסב ולא יפחתו לו מארבע כוסות של יין [שיש בהן כדי רביעית בין חי בין מזוג בין חדש בין ישן רבי יהודה אומר ובלבד שיהא טעם יין ומראה].
(1) ...In the evening of Pesach, around Mincha, a man should not eat until dark; even the poorest in Israel should not eat until he reclines. They (the community) should give him no fewer than 4 cups of wine [that has in it at least 1/4 (?)... whether it is old or new. R' Yehuda says, it should at least have the smell and taste of wine.

The Rabbis taught the regular hallel is recitedover the fourth cup, according to Rabbi Tarfon the grand hallel is recited over a fifth cup (based on the version of the Rif a rishon).

יין לצרכים רפואיים Wine for medicinal purposes
Tangential to the laws concerning wine that the Gemara cited earlier, the Sages taught: Asparagus wine or other alcoholic beverages that they were accustomed to drink early in the morning before eating, is agreeable for the heart and beneficial for the eyes, and all the more so for the intestines. And in extolling the virtues of this drink, the Gemara says: One who is accustomed to drink it, it is agreeable for his entire body. However, one must be careful, as one who drinks excessively and becomes drunk, it is harmful for his entire body.
Asparagus brew: A beverage made by soaking certain roots in wine or beer.

Abba Saul, who was a grave-digger, made careful observations upon bones, and found that the bones of those who had drunk natural (unmixed) wine were "scorched"; of those who had used mixed wine in excess were dry and transparent; of those who had taken wine in moderation were "oiled," that is, they had retained the marrow...
